This chili contains no beans and sometimes no vegetables other than chili peppers. This was president Lyndon Johnson's favorite chili and became famouse at his Texas Hill Country Ranch. It got rid of the traditional ground beef and was substituted for venison or even country deer. There were so many requests for this recipe that were sent to the white house, that this recipe got distributed throughout the U.S. in no time.
The vegetarian chili gained popularity during the 1960s with the rise of vegans. It also spready quickly to people who were dieting with no red meat. Most often the meat is substituted with tofu or potatoes. These styles of chili also always contain beans. Some variations of this recipe have also included corn, squash, potatoes, beets, and mushrooms.
White chili is made using borthern beans and turkey or chicken breast. This will iliminate tomato based sauce. Without the redness, the chili dish appears white after it is cooked.
